Spicy Crawfish Spaghetti
16 oz. uncooked spaghetti 6 oz. can tomato paste
1/3 cup vegetable oil 1 Tbsp Italian seasoning
1 chopped onion salt and pepper to taste
1 chopped bell pepper 1 Tbsp hot sauce
1 chopped celery stalk 1 cup seafood stock
10 oz. can Rotel tomatoes 1 lb. crawfish tailmeat

Boil spaghetti in salted water until done; draine, rinse and set aside.  Meanwhile, saute onion, bell pepper and celery in oil until tender.  Add tomatoes, tomato paste, seasonings, salt, pepper, hot sauce and stock.  Bring to a boil.  Reduce and simmer 30 minutes.  Add tailmeat and simmer 20 minutes.  Serve over cooked spaghetti.
