Red Beans & Rice
1/4 cup vegetable oil 1 lb. red beans
1 chopped onions Cooked rice
1 lb. sliced smoked sausage  

Saute onions in heated vegetable oil until tender.  Add sausage and cook about 15 minutes.  Add beans.  Pour in water until beans are covered by an inch.  Boil beans until beans are soft, adding water as needed.  Serve over cooked rice.
