Petit Pois
1/2 cup vegetable oil 2 cans peas with liquid
1/2 cup flour salt and pepper to taste
1 chopped onion  

Make a roux (cook oil and flour on medium heat stirring constantly until medium to dark brown, depending on your personal taste).  Add onion and simmer on low heat for about 10 minutes.  Add peas and simmer 5 minutes.
