Crawfish or Shrimp Jambalaya
cup oil 2 cups uncooked rice
2 large diced onions 1 tablespoon chopped garlic
1 cup chopped smoked sausage 1 tablespoon chopped parsley
1 lb. crawfish or shrimp tails 1 tablespoon chopped green onions
2 - 8 oz. cans tomato sauce  

Saute onions in oil until tender.  Add sausage and fry 3 minutes.  Add crawfish or shrimp and fry 15 minutes.  Add tomato sauce and cook 15 minutes.  Add rice and cook 20 minutes.  Add water till it covers 1 inch above ingredients.  Season to taste and bring to a boil; stir and cover.  Cook over low heat 25-30 minutes, stirring occasionally.  After cooked, stir in garlic, parsley and green onions.  Let stand 5 minutes and serve.
