Crawfish Au Gratin
1 chopped onion 5 oz. can evaporated milk
2 finely chopped green onions 2 egg yolks
3 ribs chopped celery 2 lbs. crawfish tailmeat
1 cup butter salt & pepper to taste
4 Tbsp flour 10 oz. shredded Cheddar cheese
12 oz. can evaporated milk 1/2 cup Parmesan cheese

Sauté onion, green onion and celery in butter until tender.  Add flour and blend.  Add both cans of evaporated milk.  Remove from heat and add remaining ingredients except cheese.  Pour into casserole dish.  Top with Cheddar and sprinkle Parmesan on top.  Bake at 350 degrees for 15 minutes.
