Crawfish in Cream Sauce
˝ lb. fresh mushrooms Cajun seasoning to taste
3 tablespoons butter 1 lb. crawfish tailmeat
2 tablespoons flour bread crumbs
1 cup heavy cream butter
˝ cup white wine  

Sauté mushrooms in butter for 5 minutes.  Add flour and blend.  Add cream, stirring constantly until blended.  Add wine, seasoning and crawfish.  Pour into shallow, buttered casserole dish.  Top with bread crumbs and dot with butter.  Cover and bake at 375 degrees for 15 minutes.
